Ramen Noodle Salad

I’ve seen a lot of recipes lately for ramen noodle salad; this is a Chinese style salad with the addition of crumbled ramen noodles.  I thought this was a great idea, but the recipes I saw all included the seasoning packet from the ramen soup in the dressing.  Given the insane amount of sodium in the ramen noodle seasoning packet, I wanted to make a ramen noodle salad with a dressing that didn’t include the seasoning packet but still had a lot of flavor. After a few trials, I came up with a dressing that’s sweet and tangy with a lot of flavor.

This ramen noodle salad is great for a quick week night meal because it’s very easy to prepare; you can have this salad ready to serve for dinner in less than 30 minutes!

  1. One package of coleslaw mix (use the kind that includes carrots and radishes)
  2. One red bell pepper, sliced
  3. Shredded chicken (you can use a store bought rotisserie chicken if you're short on time, or you can boil 2-3 pieces of boneless, skinless chicken breast until fully cooked, then shred the chicken when cooled).
  4. 1/4 Cup of cilantro, chopped (about a handful), plus extra for garnish.
  5. 4 Green onions, diced
  6. One package of ramen noodles, uncooked
  7. 1/4 Cup of toasted sesame seeds (I just toasted them in a small skillet until they were golden brown)
For the Dressing
  1. 1/2 Cup of slivered almonds
  2. 1/2 Cup of Extra Virgin Olive Oil
  3. 1/2 Cup of Rice Wine Vinegar
  4. 1/4 Cup of sugar
  5. 3 Tablespoons of Soy Sauce
  6. 2 Tablespoons of Sesame Oil
  7. 1/2 Teaspoon of Sriracha
  8. 1 Clove of garlic, minced or grated
  9. Salt and pepper, to taste.
  1. Heat oven to 350 degrees
  2. Place Ramen noodles and almonds on a cookie sheet and bake until the almonds are slightly browned and noodles are warm and slightly toasted.
  3. In a large bowl, combine the coleslaw mix, chicken, bell pepper, onion and cilantro.
  4. In a medium bowl, whisk together all ingredients for the dressing.
  5. Add the dressing to the salad mix and stir to combine.
  6. Add the ramen, almonds and sesame seeds right before serving and stir to combine. Garnish with extra cilantro, if desired
  1. It's important to add the noodles, almonds and sesame seeds right before serving, otherwise they may become soggy.
