Springtime Cocktail: Raspberry White Wine Spritzer

There’s just something about spring and summer that makes me long for new cocktail recipes.  Fall and winter seem to bring on heavy, pumpkin-y, creamy cocktails. I love cocktails that are light, refreshing and sweet (but not too sweet), so spring time takes me out of my winter beverage hibernation and into warm weather, patio lounging drinks.

Raspberry White Wine Spritzer

Serves 4-6

Two Bottles of  white wine-I wanted something sweeter than Chardonnay but not too sweet, so I chose Pinot Grigio, but you could also use Sauvignon Blanc.

1 Cup of Vodka-I used regular Vodka but Raspberry Vodka would probably be good too.

One 16 ounce container of raspberries, fresh or frozen

Two cups of water

One cup of sugar

One can of frozen lemonade concentrate

Three cups of Lemon Lime Soda or Club Soda-if you prefer sweeter drinks, use the Lemon Lime soda.  If you prefer less sweet, use the Club Soda.

Lemon wedges for garnish

Combine the raspberries, sugar and water in a saucepan and bring to a boil.  Allow the raspberries to boil for five minutes, then remove from the heat and allow the mixture to cool.  Once cooled, strain the mixture with a fine meshed sieve to strain out the raspberry seeds.

Place the strained raspberry juice in a large pitcher, then add the wine, vodka,  lemonade concentrate and club soda and stir to combine the ingredients.  Serve over ice and garnish with lemon wedges, if desired.
